The main answer was to keep using Pages. I used to work on Open Office, but it doesn't work well with split view (the interface becomes really ugly with a black bar at the top and it doesn't do well with tabs at all). I also hate that I can't display my word count in the interface. So I gave Libre Office a try. It crashes, it's slow AF on a brand new 2K17 SSD imac, it's glitchy and I also have some issues with the interface (same black bar at the top than Open Office). I also tried MS Word, but I personally hate the interface, it is also a lot slower than OpenOffice/Pages. So as a result I just stick with.
